Ingredients
- Toor dal1/4cup

- Tomato1
- Shallots10
- Turmeric powder1/2tsp
- Sambar powder4tsp
- Chilli powder1/2tsp
- Asafoetida powder1/2tsp
- Jaggery powder1tsp
- Tamarind (gooseberry sized)1
- Salt to taste
- Coriander leaves2tbsp
For tempering
- Coconut oil1tbsp
- Fenugreek seeds1/4tsp
- Mustard seeds1/4tsp
- Fennel seeds1/4tsp
- Dried red chilli2
- Curry leaves1sprig

How to make Vendakkai Sambar / Ladies Finger (Okra) Sambar
- Step 1
To a pressure cooker, add toor dal, turmeric powder, sliced onion along with enough water for cooking.
- Step 2
Cook until 3 whistles or until cooked well. Set aside.
- Step 3
In a pan, add 1 tsp oil. When it becomes hot, add okra pieces.
- Step 4
Roast until it becomes slightly brown in color, which takes about 4-5 minutes on high flame. Set aside.

In a kadai, add 3 tsp oil. When it becomes hot, add mustard seeds. When they pop, add fenugreek seeds and fennel seeds. Wait for them to pop.
- Step 6
Add shallot pieces and sauté until they become transparent.
- Step 7
Add dried red chilli and sauté for 1 minute.
- Step 8
Turn the flame to low. Add chilli powder, sambar powder, and curry leaves. Mix for 15 seconds.
- Step 9
Add the cooked toor dal mix along with tomato pieces, fried okra pieces and salt.
- Step 10
Mix the tamarind with a little water, then strain it. Add this tamarind water to the sambar. Adjust the consistency by adding enough water.
- Step 11
Allow it to boil until the raw taste of tamarind is completely gone.

Add asafoetida powder.
- Step 13
Finally, add chopped coriander leaves and jaggery powder. Mix well.
- Step 14
Turn off the flame. The tasty and easy sambar is ready.
