How to make Perfect Mango Sticky Rice with Basmati Rice
- Step 1
Wash and soak the rice for 10 minutes. After that, drain it.
- Step 2
Add the drained rice to a pressure cooker along with 1 cup of second coconut milk, a pinch of salt, and 2 tbsp sugar. Cook this for 3 whistles. After that, turn off the flame and let the pressure completely settle.
- Step 3
Open the lid. If the rice feels a little dry, add 1/4 cup of second coconut milk. Cook for 1-2 whistles. The quantity of coconut milk and the cooking time depends on the rice we are taking. Set aside.
- Step 4
To the rice flour, add 3-4 tsp water and make a slurry without lumps.
- Step 5
In a saucepan, add 3/4 cup thick coconut milk, 1 1/2 tbsp sugar, rice flour slurry, and a pinch of salt. Mix it and boil. Stir continuously. When it starts bubbling, remove from the flame.
- Step 6
To the serving plate, first add 1 bowl of cooked rice. Then pour the rice flour-coconut milk mixture and place the sliced mango pieces on the sides of the plate. Sprinkle some sesame seeds.
- Step 7
Tasty mango sticky rice is ready to serve.
