How to make Homemade Pasteurized Mayonnaise

  1. Step 1

    Crack the egg into a bowl and add vinegar. Mix well.

  2. Step 2

    Boil water in a saucepan. Once it starts boiling vigorously, reduce the heat to low.

  3. Step 3

    Place the bowl with the egg and vinegar mixture over the saucepan, ensuring the bowl does not touch the water. Stir continuously for 1 minute.

  4. Step 4

    Remove from heat and let it cool down completely.

  5. Step 5

    Add the cooled mixture to a blender along with crushed garlic, pepper powder, sugar, and salt. Blend on low speed for 10 seconds.

  6. Step 6

    Add oil and blend on low speed until the texture turns thick.

    Add room temperature butter and blend again for 6-7 seconds.
