Spiced Chickpea & Kale Stew with Garlic Couscous
This hearty stew combines protein-rich chickpeas and nutrient-dense kale in a spiced tomato broth, paired with fluffy garlic couscous. It’s a simple, satisfying meal that’s cheap to make, full of flavor, and perfect for a cozy plant-based dinner.

Ingredients
For the Stew
- 1canchickpeas, drained and rinsed
- 2cupskale, chopped
- 1piecesmall onion, diced
- 1clovegarlic, minced
- 1candiced tomatoes
- 1tspsmoked paprika
- 1/2tspcumin
- 1/2tspchili powder
- 1cupwater or vegetable broth
- 1tbspwater or oil (optional, for cooking)
- Salt & pepper to taste
For the Garlic Couscous
- 1cupcouscous
- 1 1/4cupswater
- 1clovegarlic, minced
- 1/2tspsalt
How to make Spiced Chickpea & Kale Stew with Garlic Couscous
Cook the Stew
Heat water or oil in a medium pot over medium heat. Add diced onion and sauté for 3-4 minutes until soft.
Stir in garlic, smoked paprika, cumin, and chili powder for 30 seconds until fragrant.
Add chickpeas, diced tomatoes, and water or broth. Stir well, bring to a simmer, and cook for 15 minutes.
Stir in chopped kale and cook for 5 more minutes until tender. Season with salt and pepper.
Make the Garlic Couscous
In a small pot, bring water to a boil with minced garlic and salt.
Remove from heat, stir in couscous, cover, and let sit for 5 minutes. Fluff with a fork.
Serve
Plate a portion of garlic couscous and top with a ladle of chickpea and kale stew. Enjoy warm!

Adjust the amount of chili powder to suit your heat preference.
For extra flavor, use vegetable broth instead of water.
