Delicious and fluffy strawberry scones with a hint of vanilla and strawberry essence.

  • 2cups
  • 1/4cup
  • 3tsp
    baking powder
  • 1pinch
  • 1piece
    large egg
  • 1tsp
    vanilla essence
  • 150mL
  • 100g
  • 1/2cup
    fresh strawberries, chopped
  • 1tsp
    strawberry essence
  • 1
    drop red food coloring

How to make Strawberry Scones

  1. Preheat oven to 180°C. Grease a baking tray with butter and dust with flour.

  2. In a bowl, combine flour, sugar, baking powder, and salt. Set aside.

  3. Beat together buttermilk, vanilla essence, egg, strawberry essence, and a drop of red food coloring. Whisk until combined.

  4. Add butter to the flour mixture and rub in with your fingers until the mixture resembles fine breadcrumbs.

  5. Add the milk mixture to the flour mixture and stir until combined.

  6. Stir in the chopped strawberries.

  7. Place the dough on a lightly floured surface and knead. Roll out the mixture to a 3 cm thickness and cut out scones using a scone cutter. Dust the cutter with flour.

  8. Place the scones on a greased baking tray, brush with egg or milk, and bake for 18-20 minutes.

Tips & Tricks

  1. Ensure the butter is cold for a better texture.

  2. Do not overmix the dough to keep the scones light and fluffy.
