Delicious chocolate coconut biscuits sandwiched with melted chocolate.

Ingredients

(1 serving = 1 biscuit)
  • 250g
    butter or baking margarine
  • 1cup
    icing or caster sugar
  • 1tsp
    vanilla essence
  • 2tbsp
    oil
  • 1cup
    desiccated coconut
  • 2 1/2cup
    cake flour
  • 1tsp
    baking powder
  • 2tbsp
    cocoa powder
  • 2piece
    large eggs
  • 200g
    chocolate for decoration

How to make Romany Creams

  1. Preheat oven to 180°C. Grease a baking tray with butter and dust with flour.

  2. Sieve flour, baking powder, and cocoa powder. Set aside.

  3. Cream butter and sugar together. Add vanilla essence, oil, eggs, and coconut, and mix until combined.

  4. Add the dry ingredients and mix until a dough is formed.

  5. Roll dough and scrape its surface with a fork to create a rough texture.

  6. Cut with a cookie cutter and place on a baking tray.

  7. Bake for 10-15 minutes or until done.

  8. Once baked and cooled, sandwich biscuits together with melted chocolate.

  1. Ensure the butter is at room temperature for easier creaming.

  2. Use a fork to create a rough texture on the dough for a traditional look.
