How to make Moi Moi with Bone Marrow Fat(Nigerian style)
Preparing the Beans
- Step 1
Put the dry beans in a bowl and add 2 cups of water. Rub the beans together with your hands to peel off the skin.
- Step 2
Use a sieve to separate the skin peels and water from the beans. Add clean water and repeat the process until the beans are completely skin-free.
- Step 3
If you have a blender for faster result skip previous process. Blend dry beans with 2 cups of water on the lowest speed for 1 minutes or 30 seconds.Pour the blended mixture into a bowl and separate the chaff from the beans, changing the water after each process. The goal is to have clean, skin-free beans as shown in the picture 👇
Blending and Seasoning
- Step 1
Add the cleaned beans, onions, crayfish, red pepper, and shombo pepper to a blender. Blend to a very smooth, creamy texture. Add a small amount of water to ease blending.
- Step 2
Pour the blended mixture into a large bowl. Add Gyma natural spice and cooked bone marrow fat for flavor and taste.
- Step 3
Add 1/2 cup of water to adjust the consistency. It should not be too watery or too thick. Add salt and taste to adjust seasoning.
Assembling the Moi Moi
- Step 1
Boil some eggs and fish. Fry the fish if desired, or shred it into pieces. If using shredded method, add to your moi moi while mixing
- Step 2
Cut the boiled eggs into halves or quarters.
- Step 3
Scoop 1 cup of the Moi Moi mixture into transparent nylon, Moi Moi leaves, foil paper, or aluminum foil plates.As for mine I used transparent nylon as shown in the picture.Add a slice of fried fish and a piece of sliced egg to each portion.
- Step 4
Tie the nylon securely ,double each nylon to prevent leakage . Repeat the process until all the mixture is used.
Cooking the Moi Moi
- Step 1
Place the tied Moi Moi portions into a pot of boiling water.
- Step 2
Cover the pot with a sack bag or foil for faster cooking, then place the lid on top.
- Step 3
Cook for about 30 minutes. Check for doneness by inserting a knife or spoon handle into the Moi Moi. If it comes out clean and non sticky, it is ready.
- Step 4
Allow to cool slightly or serve hot with pap, drinking garri, or your preferred accompaniment.
