For dough
- 2cupsflour
- 3pieceeggs
- 1/2tspsalt
- 1/2cupvirgin olive oil
Creamy sauce
- 2pieceegg yolks
- 1pieceegg
- 30gparmigiano
- 2tbspboiled pasta water
- 150gpancetta or bacon
- 1dashgranulated black pepper
- 1pinchsalt
How to make Carbonara
Pasta dough
Make a hole in the center of the flour, add eggs, salt, and olive oil.
Knead for 10-15 minutes.
Wrap in kitchen cellophane and keep in the refrigerator for 30 minutes.
Roll and cut into spaghetti shapes.
Carbonara creamy sauce
Place egg, egg yolks, parmegano, black pepper, and salt in a bowl and mix.
Add grated parmesan and mix until it becomes a creamy mass.
Add boiled pasta water and mix.
Fry the bacon in a pan.
Add bacon to the creamy mass.
Transfer the cooked pasta to the bacon pan and add the prepared creamy mass.
Tips & Tricks
Ensure the pasta dough is well-kneaded for a smooth texture.
Use freshly grated parmesan for the best flavor.
Do not overcook the bacon; it should be crispy but not burnt.
