Ingredients

(1 serving = 1 small bowl)
  • 3
    to 4 medium sized raw mangoes
  • 2tbsp
    mustard oil
  • 1tsp
    cumin seeds
  • 1/2tsp
    fenugreek seeds
  • 1tsp
    coriander powder
  • 1/2tsp
    fennel seeds (optional)
  • 1tsp
    turmeric powder
  • 1/2tsp
    red chilly powder
  • Some curry leaves
  • 2tbsp
    sugar/ jaggery powder
  • 2
    green chillies
  • Salt to taste
  • water as required

How to make Raw Mango Mahni

Wash and peel raw mangoes and boil them with a cupful of water. You can also pressure cook for one whistle for a faster cook.

  1. Next purée them by simply mashing with a potato masher. Reserve the seeds too as they taste good in the mahni. Now heat mustard oil in a kadai and splutter the fenugreek seeds, cumin and add the rest of the spices and herbs. Add a tablespoon of water so that the spices don’t burn. Finally add in the mango pulp along with the seeds, add sugar, salt and water as required and cook till the mahni thickens a bit. Your mani looks beautiful and golden! Enjoy with rice or flatbreads.

Tips & Tricks

  1. Sugar can be replaced with jaggery as healthier option but colour will be darker. Using a silicon spatula is like having a best friend in the kitchen as it glides smoothly and does not scratch cookware. You can get the one similar to mine here.This plant based recipe can be made Satvic by avoiding garlic.
