- 3cupsmixed vegetables (gourd, zucchini, yam, potato, beans, carrots) chopped into 2 inch sticks

- 5sprigscurry leaves
- 1bundlemoringa sticks or moringa leaves

How to make Quick and Easy Avial
Cook Vegetables
In a pot, add the mixed vegetables, turmeric powder, salt, and water to just cover the vegetables and boil.
Add the hard vegetables that take longer cooking time first, followed by softer veggies like gourd and zucchini later.
Cook until the vegetables are tender but not mushy.
Prepare Coconut Mixture
Grind the chopped coconut, green chilies, and cumin seeds into a coarse paste with a little water in a mixture grinder.
Mix and Cook
Mix the coconut mixture with the whisked yogurt.
Just before serving, add this mix to the cooked vegetables.
Stir well and let it heat for 2 minutes on low heat without letting it boil, because the yogurt would curdle.
Avial is best enjoyed at tepid temperature.
