A delicious and rich sweet potato pudding made with coconut milk, spices, and a hint of rum.
Ingredients
3 Servings
- 5lbsweet potato
- 3cupsdark sugar
- 1cupflour
- 1tspcinnamon powder
- 1packet Coconut Milk Powder
- 5cupswater
- 1/4cupMargarine, melted
- 1piecewhole nutmeg, grated
- 1tspsalt
- 1tspcinnamon powder
- 1tspvanilla essence
- 1tbspwhite rum
- 1tbsplime juice
- 1tspBrowning (optional)
How to make Sweet Potato Pudding
Peel, cut, and grate sweet potatoes. Place in a large mixing bowl.
Add dark sugar, flour, and raisins.
Combine Coconut Milk Powder with water, mix well, and add to the sweet potato mixture.
Add melted margarine, grated nutmeg, salt, cinnamon powder, vanilla essence, rum, lime juice, and browning. Mix well.
Scrape mixture into a greased 10-inch baking tin.
Bake in a pre-heated oven at 350°F (180°C) for 1 1/2 to 1 3/4 hours.
Tips & Tricks
5 pounds of sweet potato will yield approximately 12 cups when grated.
