A delicious and rich sweet potato pudding made with coconut milk, spices, and a hint of rum.

Ingredients

  • 5lb
    sweet potato
  • 3cups
    dark sugar
  • 1cup
    flour
  • 1tsp
    cinnamon powder
  • 1
    packet Coconut Milk Powder
  • 5cups
    water
  • 1/4cup
    Margarine, melted
  • 1piece
    whole nutmeg, grated
  • 1tsp
    salt
  • 1tsp
    cinnamon powder
  • 1tsp
    vanilla essence
  • 1tbsp
    white rum
  • 1tbsp
    lime juice
  • 1tsp
    Browning (optional)

How to make Sweet Potato Pudding

  1. Peel, cut, and grate sweet potatoes. Place in a large mixing bowl.

  2. Add dark sugar, flour, and raisins.

  3. Combine Coconut Milk Powder with water, mix well, and add to the sweet potato mixture.

  4. Add melted margarine, grated nutmeg, salt, cinnamon powder, vanilla essence, rum, lime juice, and browning. Mix well.

  5. Scrape mixture into a greased 10-inch baking tin.

  6. Bake in a pre-heated oven at 350°F (180°C) for 1 1/2 to 1 3/4 hours.

Tips & Tricks

  1. 5 pounds of sweet potato will yield approximately 12 cups when grated.
