Jamaican Jerk Chicken

Ingredients
Chicken and Marinade
- 2lbchicken pieces (legs, thighs, wings, breasts, or a combination)
- 1/4cupjerk seasoning (store-bought or homemade)
- 2clovegarlic, minced
- 1tbspsoy sauce
- 1tbspbrown sugar
- 2tbsplime juice
- 2tbspolive oil
- 2piecescotch bonnet peppers, chopped (optional)
- Salt and black pepper, to taste
Homemade Jerk Seasoning
- 2tbspallspice
- 1tbspthyme
- 1tbspcinnamon
- 1tbspnutmeg
- 1tbspcayenne pepper
- 1tbspblack pepper
- 2clovegarlic, minced
How to make Jamaican Jerk Chicken
Preheat oven to 400°F (200°C) or grill to medium-high heat.
In a small bowl, mix jerk seasoning, garlic, soy sauce, brown sugar, lime juice, and olive oil.
Add chopped scotch bonnet peppers (if using) to the marinade.
Place chicken pieces in a large bowl or ziplock bag. Pour marinade over chicken and massage to coat evenly.
Cover and refrigerate for at least 2 hours or overnight.
Remove chicken from marinade, letting excess liquid drip off.
Grill chicken for 20-25 minutes per side or bake for 30-35 minutes, until cooked through.
Season with salt and black pepper to taste.
Serve hot with rice and peas, roasted vegetables, or your favorite sides.
Tips & Tricks
Adjust scotch bonnet pepper amount or omit for less heat.
Use wood chips like pimento or apple wood for smoking flavor (optional).
Jerk seasoning can be stored in an airtight container for up to 6 months.
