Ingredients

Chicken and Marinade

  • 2lb
    chicken pieces (legs, thighs, wings, breasts, or a combination)
  • 1/4cup
    jerk seasoning (store-bought or homemade)
  • 2clove
    garlic, minced
  • 1tbsp
    soy sauce
  • 1tbsp
    brown sugar
  • 2tbsp
    lime juice
  • 2tbsp
    olive oil
  • 2piece
    scotch bonnet peppers, chopped (optional)
  • Salt and black pepper, to taste

Homemade Jerk Seasoning

  • 2tbsp
    allspice
  • 1tbsp
    thyme
  • 1tbsp
    cinnamon
  • 1tbsp
    nutmeg
  • 1tbsp
    cayenne pepper
  • 1tbsp
    black pepper
  • 2clove
    garlic, minced

How to make Jamaican Jerk Chicken

  1. Preheat oven to 400°F (200°C) or grill to medium-high heat.

  2. In a small bowl, mix jerk seasoning, garlic, soy sauce, brown sugar, lime juice, and olive oil.

  3. Add chopped scotch bonnet peppers (if using) to the marinade.

  4. Place chicken pieces in a large bowl or ziplock bag. Pour marinade over chicken and massage to coat evenly.

  5. Cover and refrigerate for at least 2 hours or overnight.

  6. Remove chicken from marinade, letting excess liquid drip off.

  7. Grill chicken for 20-25 minutes per side or bake for 30-35 minutes, until cooked through.

  8. Season with salt and black pepper to taste.

  9. Serve hot with rice and peas, roasted vegetables, or your favorite sides.

  2. Use wood chips like pimento or apple wood for smoking flavor (optional).
