A simple and healthy vegetable soup packed with a variety of fresh vegetables and seasoned with herbs.
Ingredients
- 2tbspolive oil
- 1pieceonion, chopped
- 3clovegarlic, minced
- 2piececarrots, chopped
- 2piececelery stalks, chopped
- 1piecezucchini, chopped
- 1piecepotato, peeled and diced
- 1piecebell pepper, chopped
- 1cupgreen beans, trimmed and chopped
- 1candiced tomatoes (14 oz)
- 4cupsvegetable broth or water
- 1tspdried thyme
- 1tspdried basil
- 1/2tspblack pepper
- Salt to taste
- 1cupspinach or kale (optional)
- 1/2cupfrozen peas or corn (optional)
- Fresh parsley for garnish
How to make Healthy Vegetable Soup
Sauté Vegetables
Heat the olive oil in a large pot over medium heat.
Add the chopped onion, garlic, carrots, and celery. Sauté for 4-5 minutes until the onions become soft and translucent.
Add Other Vegetables
Add the zucchini, potato, bell pepper, and green beans. Stir and cook for another 3-4 minutes.
Add Broth and Seasonings
Pour in the vegetable broth (or water) and add the diced tomatoes.
Stir in the thyme, basil, pepper, and salt to taste.
Simmer
Bring the soup to a boil, then reduce the heat to low and cover the pot.
Let the soup simmer for 20-25 minutes, until the vegetables are tender.
Optional Add-ins
If using spinach, kale, peas, or corn, add them to the soup in the last 5 minutes of cooking.
Taste and Adjust
Taste the soup and adjust the seasoning if necessary (add more salt, pepper, or herbs).
Serve
Ladle the soup into bowls and garnish with fresh parsley.
