How to make Kerala style Fish fry
Preparation
• Prepare the Marinade
In a small bowl, mix turmeric powder, red chili powder, Kashmiri chili powder, black pepper powder, ginger-garlic paste, fennel powder, lemon juice, and salt. Add a few drops of water to make a thick paste.
• Marinate the Fish
Clean and pat dry the fish. Apply the marinade evenly on both sides. Ensure the marinade gets into any cuts or slits on the fish. Let it rest for at least 20–30 minutes for the flavors to soak in.
• Heat the Oil
Heat coconut oil in a frying pan over medium heat. Add the curry leaves to the hot oil and let them crisp up. This enhances the flavor of the oil.
• Fry the Fish
Place the marinated fish gently into the pan. Fry on medium heat for 3–4 minutes on each side until the fish is golden brown and crispy. Be careful while flipping to avoid breaking the fish.
• Serve
Drain the fried fish on paper towels to remove excess oil. Serve hot with lemon wedges and raw onion rings or alongside steamed rice and Kerala-style curries.
