- 24ozhalibut fillets
- 2ozparmesan cheese, shredded
- 4clovegarlic, finely chopped
- 2tbspparsley, fresh, chopped
- 2tbsplemon juice
- 2tbspolive oil
- 1tbsplemon zest
- 1tbspground black pepper
- 2tsppaprika
- 1/2tbspthyme
- 1/2tbspsalt
How to make Parmesan Crusted Halibut
Preparation
Preheat oven to 400°F (200°C) or gas mark 6.
In a shallow bowl or on a plate, combine the parmesan cheese, garlic, salt, pepper, thyme, paprika, parsley, and lemon zest. Toss until evenly blended.
Coating and Baking
On another plate, brush all of the halibut fillets with olive oil.
Place the fillets one at a time in the parmesan mixture, making sure to cover all sides, and place on a parchment-lined sheet pan.
Bake for 5-10 minutes depending on the thickness of the halibut. This fish cooks quickly and dries out easily.
Serving
Squeeze the lemon juice over the halibut and serve with your favorite sides.

Ensure the halibut is not overcooked to prevent it from drying out.
