Traditional Koeksisters recipe

Ingredients

For the syrup

  • 4cups
    water
  • 4cups
    sugar
  • 1tsp
    cream of tartar
  • 1tsp
    ground ginger
  • 1tsp
    vanilla essence
  • 2tsp
    lemon juice

For the dough

  • 2cups
    cake flour
  • 2tsp
    baking powder
  • 1/2tsp
    salt
  • 2tbsp
    butter
  • 1/2cup
    milk
  • 1
    large egg

For frying

  • oil for deep-frying

How to make Traditional Koeksisters

Make the syrup (night before)

  1. In a large pot, combine water, sugar, cream of tartar, and ginger.

  2. Bring to a boil, stirring until sugar dissolves.

  3. Add lemon juice and vanilla essence.

  4. Simmer for 10 minutes, then cool and refrigerate overnight.

Make the dough

  1. Sift the flour, baking powder, and salt together.

  2. Rub in the cold butter until the mixture resembles breadcrumbs.

  3. Beat the egg and milk together, then add to the flour mixture. Mix into a soft dough.

  4. Knead lightly for 2–3 minutes, cover, and let rest in the fridge for 30 minutes.

Shape the koeksisters

  1. Roll out the dough to about 5mm thick.

  2. Cut into strips about 6–8cm long and 1.5cm wide.

  3. Braid three strips together and pinch the ends to seal.

Fry

  1. Heat oil in a deep pot to 180°C.

  2. Fry 2–3 koeksisters at a time until golden brown, about 2–3 minutes per side.

  3. Remove and immediately dunk into the cold syrup.

  4. Let them soak in syrup for 30 seconds, then place on a wire rack to drain.

Serve

  1. Best enjoyed cold, sticky, and crunchy.
