How to make Rice Fritters (Chawal ke Pakode)
In a mixing bowl, combine the boiled rice, boiled potato, green chillies, ginger, gram flour, red chilli powder, cumin powder, carom seeds, sesame seeds, turmeric, coriander powder, chat masala, salt and oil. Mix well to form a smooth dough. (Do not add water).
Grease your palms with oil and take small portions of the dough. Shape them into small balls or long rolls and set them aside.
Heat oil in a heavy-bottomed frying pan or deep-fryer.
Once the oil is hot, slide the rolls in batches. Fry them on medium-high heat until they turn golden brown and crispy.
Use a slotted spoon to remove the fried fritters from the oil, allowing excess oil to drain on a paper towel.
Serve the rice fritters hot with your favourite sauce or tamarind chutney.

FAQS
How do I make crispy rice fritters using leftover rice?
To make crispy rice fritters, combine leftover boiled rice with boiled and grated potatoes, finely chopped green chilies, ginger, and various spices like cumin and coriander powder. Mix in gram flour to bind the ingredients, shape them into small balls or rolls, and fry in hot oil until golden brown and crispy.
Are rice fritters suitable for gluten-free diets?
Yes, rice fritters can be made gluten-free by substituting gram flour (besan) with a gluten-free flour blend or chickpea flour. Just ensure that all other ingredients, including spices and any sauces served with them, are also gluten-free.
What can I use instead of gram flour in rice fritters?
If you don't have gram flour (besan), you can substitute it with all-purpose flour, rice flour, or even chickpea flour for a similar texture. Each option will slightly alter the flavor and texture, so choose based on your preference.
How should I store leftover rice fritters?
To store leftover rice fritters, let them cool completely, then place them in an airtight container. They can be refrigerated for up to 3 days. To reheat, bake them in the oven or air fryer to regain their crispiness instead of microwaving.
What sauces pair well with rice fritters?
Rice fritters pair wonderfully with a variety of sauces and chutneys. Popular choices include tamarind chutney, mint chutney, or yogurt sauce. You can also serve them with spicy ketchup or a tangy garlic sauce for an extra kick!
