    Vegetable Oil
  • 3/4cup
    Sugar
  • 2
    Eggs
  • 1tsp
    Vanilla Extract

    All Purpose Flour (Maida)
  • 1 1/2tsp
    Baking Powder
  • 1/2tsp
    Cinnamon powder
  • 1/2tsp
    Nutmeg Powder
  • 1/8tsp
    Salt
  • 140mL
    Milk (at room temperature)
  • 1/2cup
    Plums (chopped)
  • 3
    Plums (sliced) to decorate

Method

  1. Preheat your oven to 350°F (180°C) and prepare a cake pan by greasing it and lining the base and sides with parchment paper.

  2. Combine vegetable oil and sugar in a mixing bowl. Mix well.

  3. Add eggs and vanilla extract, and whisk until the mixture achieves a light and fluffy texture.

  4. In a separate bowl, whisk together all-purpose flour, baking powder, cinnamon powder, nutmeg powder, and salt.

  5. Gradually add the flour mixture to the eggs, stirring gently to maintain a smooth and lump-free batter. Add milk to the batter and mix well.

  6. Gently fold the chopped plums into the batter.

  7. Pour the batter into the prepared cake pan and decorate the top with sliced plums.

  8. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the centre comes out clean.

  9. Allow the plum cake to cool on a wire rack.

  10. Once cooled, slice and enjoy the plum cake alongside a comforting cup of tea.
