Enjoy the oregano and zesty dressing on crispy crackers for a light and refreshing, delightful alternative to chips, ideal for party appetizers, family gatherings or any other occasion that calls for a tasty treat. 

Ingredients

  • 20
    Crackers
  • 300g
    Chicken Breast (boiled and shredded)
  • 1tbsp
    Olive Oil
  • 1cup
    Corn Kernels (boiled)
  • 1/4cup
    Onion (finely chopped)
  • 2sprigs
    Parsley Leaves (chopped)
  • 2cup
    Lettuce leaves (chopped)

For Dressing

  • 1/2cup
    Mayonnaise
  • 1tsp
    Salt
  • 1tsp
    White Pepper
  • 1tsp
    Black Pepper
  • 1/2tsp
    Chilli Flakes
  • 1/2tsp
    Oregano
  • 1tsp
    Sugar
  • 1tbsp
    Lemon Juice
  • 1tbsp
    Dijon Mustard Sauce

Method

  1. Heat olive oil in a pan over medium-high heat.

  2. Add the boiled and shredded chicken and saute for 3-4 minutes. Set it aside.

  3. Combine the sauteed chicken, boiled corn kernels, and finely chopped onion in a large mixing bowl.

  4. Prepare the dressing in a separate bowl by mixing the mayonnaise, salt, white pepper, black pepper, chilli flakes, sugar, lemon juice, and mustard sauce. Sprinkle oregano into the dressing and gently mix.

  5. Pour the dressing over the chicken mixture and toss gently to coat all the ingredients evenly.

  6. Add the chopped parsley to the mixture and mix.

  7. Refrigerate the chicken mixture for at least 30 minutes to let the flavours meld together.

  8. Before serving add the chopped lettuce to the chilled chicken mixture and mix gently.

  9. Place a small portion of the chicken mixture as a topping on each cracker and serve chilled.

Tips & Tricks

  1. Pat the lettuce leaves dry before dicing.

  2. For a creamier dressing, add more mayonaisse.

  3. Adjust the seasoning to your taste.

  4. The best substitute for Dijon Mustard is yellow mustard sauce.

  5. This recipe yields 20 servings depending on the size of the crackers.
