Chicken Sweetcorn Noodles Soup

Chicken Noodle Corn Soup is a popular Chinese-style soup comforting and delicious that is perfect for a cozy night in. The soup is made with juicy chicken, sweet corn kernels, and soft noodles in a flavorful broth, making it a hearty and satisfying dish. With simple and easily accessible ingredients, this recipe is easy to make and is sure to become a family favourite. Its warm and comforting flavours make it the perfect meal to enjoy on a chilly day.

  • 250g
    chicken (boneless or chest bone)
  • 1L
    - water
  • 1/2tsp
  • 1cup
    boiled noodles (egg or plain)
  • 1/2cup
    frozen corn kernels
  • 4tbsp
    white vinegar
  • 2
    chopped green chillies
  • 2tbsp
  • 1/2cup
  • 1
  • 1tsp
    soya sauce
  • 1tbsp
    chilli sauce (optional)
  • 1tbsp
    black pepper powder
  • 1/2tbsp


  1. In a deep pot, add a litre of water, salt, and chicken. Cover and cook on a medium flame for 8-10 minutes until the chicken is tender or for 2 whistles in a pressure cooker.

  2. Remove the chicken from the pot, allow it to cool, and then shred it into small pieces. Reserve the chicken stock in the pot for future use.

  3. In a pan, boil 2 glasses of water. Add the noodles and ½ tsp oil to it. Boil for 5 minutes, then strain and keep the noodles aside.

  4. In a bowl, mix 3 tbsp of vinegar and chopped green chillies and keep aside.

  5. In another bowl, mix ½ cup water and cornflour and keep aside.

  6. Place the chicken stock pot on high flame and add the corn kernels and shredded chicken. Boil for 2-3 minutes.

  7. Add black pepper and salt to taste and stir on high flame.

  8. Reduce the flame to medium and slowly add the cornflour mix while stirring continuously. Cook the soup until it reaches the desired consistency.

  9. Add the boiled noodles and stir for a minute.

  10. In a bowl, beat the egg thoroughly with a fork. While continuously stirring the soup, slowly pour in the beaten egg.

  11. Cook for a minute and then add soya sauce, 1 tbsp vinegar, and chilli sauce (if using). Stir well

  12. Check the seasoning and adjust to taste. Serve hot with chillies mixed in vinegar.

Tips & Tricks

  1. You can use boneless or chest bone chicken for this recipe.

  2. Boil the noodles separately, and then add them to the soup just before serving. This will prevent them from getting too soft and mushy.

  3. Use frozen or fresh corn kernels as per your preference.

  4. If you like your soup to be spicy, you can add more chopped green chillies or chilli sauce.

  5. You can adjust the consistency of the soup by adding more or less cornflour mix as per your liking

  6. The number of servings depends on individual preferences and appetite.
