How to make Sultana Scones
For Scones
Preheat oven to 450 F. That's the highest switch on your oven. Lightly grease the bottom of an oven-proof pan.
In a large bowl, whisk together flour, sugar, baking powder, and salt.(Make sure to whisk it thoroughly)
Cut or grate the frozen butter into the flour mixture, tossing occasionally with a rubber spatula so that the butter pieces are coated in the flour.
Mix the vanilla extract into the whole milk and pour it into the dry ingredients.
Stir with a rubber spatula until a dough forms. Whatever you do, don't add more water.
Sprinkle about 1-2 tablespoons of flour on a flat surface and pour the dough out on top.
Begin to knead the dough into a ball. Flatten and fold the dough 2-3 times,(this will create layers in the finished scone) adding more flour if needed, but use the flour sparingly to keep from drying out the dough.
Pat the dough out into a 1-inch thick rectangle. Set aside.
Add sultanas to a bowl and toss with 1 teaspoon of flour.
Press the sultanas into the dough.
Carefully fold the dough in half and press back out. Be sure to keep your hands and work surface well-floured. Simply tuck the sultanas in if they fall out.
Fold and press out the dough again 2-3 more times. (Sultanas might fall out, keep tucking it in and work as quickly as possible)
Pat the dough out one final time into a 1-inch thick rectangle.
Dip a 3-inch cutter into flour and cut out 8 biscuits. Dip your cutter in flour each time. Do not twist the cutter.
Dough will remain. Just mold it into a ball and pat it into a 1-inch circle. Then, cut it pizza style.
Place the biscuits on the prepared pan with sides touching.
Using a pastry brush, brush the tops lightly and evenly with half n half. (This helps with browning)
Turn the oven back on and bake for 20 minutes on the middle rack. (It may need more or less time depending on your oven)
Allow to cool on a rack and firm up.
Serve warm or room-temperature.
Bon appétit! 😊

FAQS
How do I store leftover sultana scones to keep them fresh?
To store leftover sultana scones, place them in an airtight container at room temperature for up to 2 days. If you want to keep them longer, you can freeze them. Just wrap each scone individually in plastic wrap and then place them in a freezer bag. They can be frozen for up to 3 months. To enjoy, simply thaw at room temperature or warm them in the oven.
Can I make sultana scones gluten-free?
Yes, you can make gluten-free sultana scones by substituting the all-purpose flour with a gluten-free flour blend. Make sure to check that the baking powder is also gluten-free. The texture may vary slightly, but they should still be delicious!
What can I substitute for sultanas in scones?
If you don't have sultanas on hand, you can substitute them with other dried fruits like raisins, currants, or chopped dried apricots. You can also use chocolate chips for a different flavor twist. Just make sure to coat them in flour before adding them to the dough to prevent them from sinking.
What are some good pairings for sultana scones?
Sultana scones pair wonderfully with clotted cream and jam, making them perfect for afternoon tea. You can also enjoy them with butter or a spread of honey. For a beverage, consider serving them with a cup of tea or coffee for a delightful treat.
How can I ensure my sultana scones are fluffy and light?
To ensure your sultana scones are fluffy and light, make sure to use cold ingredients, especially the butter and milk. Avoid over-kneading the dough, as this can make the scones tough. Also, be sure to bake them at a high temperature (450°F) to help them rise quickly.
