2 Servings
(1 serving = 1/2 chicken)
  • 1cup
    greek yogur
  • 1/4
    olive oil
  • 1/4cup
    lemon juice
  • 1tsp
    each paprika
  • oregano
  • black pepper
  • cayenne pepper
  • cinnamon
  • 1
    peeled kiwi
  • 4
    garlic cloves



  1. Place all ingredients other than chicken in the blender. Mix until you have a very smooth paste. Set aside for all spices to infuse together

  2. Remove the back bone of the chicken and press on the chest bone to flatten the chicken.

  3. Massage the chicken with mixture inside out and under the skin.

  4. Wrap tightly in plastic wrap and keep in the fridge a minimum of 1 hour and a maximum of 12 hours.

  5. Remove wrapping and place on a baking sheet in a hot oven @180 or 375 degrees covered tightly with a layer of baking paper and topped with aluminum foil. You need the moisture to stay trapped.

  6. Bake for one hour.

  7. Remove wrapping and grill from the top for half an hour to achieve the charcoal brown color.

  8. Drizzle with more lemon juice and olive oil and serve pipping hot.

Tips & Tricks

  1. Kiwi works as a natural meat tenderizer.
