- 312 1/2mLWater (50ml Pasta Water)

- 20mLVinegar
- 1tspOil

- 1 1/2gGround Black Pepper
- 1/2tspOregano Powder
- 2tspPatis
- 1/4tspSalt
- 1tbspLechon Sauce
How to make Easy Lechon Pasta Recipe
In a pot, boil 312.5ml of water with a pinch of salt and 1 tsp of oil.
While waiting for the water to boil, chop the onions and mince the garlic.
Place the pasta in the boiling water and cook according to packaging directions or until al dente.
Once al dente, drain the pasta but set aside 50ml of pasta water for the sauce. Set aside the cooked pasta in a separate container.
In the same pot, put the pork fat and sauté on low heat until the oil comes out from the fat. Then sauté the lechon flakes until crispy.
Add the onions and sauté until they are slightly caramelized. Then add the garlic and sauté until light golden brown.
Add the laurel leaves and ground black pepper. Sauté the mixture for at least 5 seconds, then add the vinegar.
Add the pasta water to slightly thicken the sauce and reduce the sourness of the vinegar. Do not cover the pot.
Simmer the sauce on medium heat until it has slightly thickened and reduced.
Add the rest of the pasta seasoning and adjust according to taste.
