How to make Sabz Diwani Handi (Restaurant Style)
Preparation
Add ghee and oil to a pressure cooker. Add elaichi and chopped onion. Sauté for a minute.
Add dal chini and cook until onions turn golden brown.
Add ginger garlic paste and roast for a minute.
Add tomato puree, fresh cream, red chilli powder, haldi, coriander powder, kitchen king masala, pav bhaji masala, and garam masala. Cook for 2 minutes.
Add kasuri methi and roast until the gravy sticks to the base.
Add salt to taste, sugar, and cashew paste. Keep mixing and cooking on low flame.
Add water and mixed vegetables. Mix well and pressure cook for 1 whistle.
In a separate pan, add ghee and roast cashews and almonds for a minute.
Add paneer cubes to one side of the pan and fry until golden.
Add paneer and roasted dry fruits to the gravy and garnish.
