How to make Kachalu Ki Khatti Meethi Chaat

  1. Wash the kachalu/yam thoroughly and pressure cook it for 3-4 whistles with a pinch of cooking soda.

  2. Once cooked, let it cool and then peel and chop the yam into bite-sized pieces.

  3. In a large bowl, combine the yam, sliced onions, chopped cucumber, green chillies, and grated ginger.

  4. Add tamarind water and jaggery powder to the mixture and mix well.

  5. Season with salt, black salt, black pepper powder, red chilli powder, cumin seeds powder, and ajwain.
