How to make Delhi Street Style Matar Kulcha

Matar Preparation

  1. Step 1

    Wash and soak the white peas overnight.

  2. Step 2

    In the morning, strain the matar and add salt, cloves, and water.

  3. Step 3

    Pressure cook until 6 to 7 whistles.

Green Chutney

    Grind mint leaves, coriander leaves, green chilli, ginger, and ice cubes in a mixer.

    Add salt and keep aside.

    Soak tamarind in water, mix, and remove the seeds.

    Keep aside.

    Check if the matar is soft enough to be crushed when pressed between fingers.

    Transfer to a bowl and add chopped onion, tomato, coriander leaves, spice mix, green chutney, tamarind chutney, and lemon juice.
