Ingredients

Matar Preparation

  • 2cups
    white peas
  • 1 1/2tsp
    salt
  • 6clove
    cloves
  • 1L
    water

Green Chutney

  • 1cup
    mint leaves
  • 1cup
    coriander leaves with stem
  • 5piece
    green chilli
  • 1in
    ginger
  • 4piece
    ice cubes
  • 1 1/2tsp
    salt

Spice Mix

  • 1tbsp
    black salt
  • 1tsp
    black pepper powder
  • 3/4tbsp
    coriander powder
  • 3/4tbsp
    cumin seeds powder
  • 1tbsp
    Kashmiri lal mirch powder
  • 1tbsp
    chat masala

Tamarind Chutney

  • 1/2cup
    tamarind
  • 1cup
    water

Final Assembly

  • 1piece
    large onion
  • 2piece
    tomato
  • 1tbsp
    coriander leaves
  • 2tbsp
    spice mix
  • 3tbsp
    green chutney
  • 2 1/2tbsp
    tamarind chutney
  • 1tbsp
    lemon juice

How to make Delhi Street Style Matar Kulcha

Matar Preparation

  1. Wash and soak the white peas overnight.

  2. In the morning, strain the matar and add salt, cloves, and water.

  3. Pressure cook until 6 to 7 whistles.

Green Chutney

  1. Grind mint leaves, coriander leaves, green chilli, ginger, and ice cubes in a mixer.

  2. Add salt and keep aside.

Spice Mix

  1. Mix black salt, black pepper powder, coriander powder, cumin seeds powder, Kashmiri lal mirch powder, and chat masala.

  2. Blend in a mixer and keep aside.

Tamarind Chutney

  1. Soak tamarind in water, mix, and remove the seeds.

  2. Keep aside.

Final Assembly

  1. Check if the matar is soft enough to be crushed when pressed between fingers.

  2. Transfer to a bowl and add chopped onion, tomato, coriander leaves, spice mix, green chutney, tamarind chutney, and lemon juice.

  3. Mix well and mash some matar while doing this.

Serving

  1. Add ginger juliennes, chopped tomatoes, onion, and coriander.

  2. Serve with hot kulchas.
