How to make Amritsari Famous Nutri Masala
Step 1
Pressure cook the soya nutri chunks with water till 1 whistle.
When the pressure releases, open the cooker.
Wash the soya chunks in cold water 3 to 4 times.
Squeeze out extra water and keep aside.
Step 2
Heat desi ghee in a kadahi and add cumin seeds. Let them crackle.
Add chopped onion and cook for 2 minutes.
Add ginger garlic paste and cook for a minute.
Add tomatoes and cook for 4-5 minutes on medium heat.
Add spices and cook for a minute.
Add spinach puree, capsicum, and water. Cook till the gravy releases ghee.
Add curd and cook further for 3-5 minutes.
Switch off the flame.
Step 3
In a separate kadahi, heat butter and add cumin seeds and onion. Cook till golden.
Add the cooked gravy and soya sauce. Cook for a minute.
Add soya chunks and water, and cook further for 3 minutes on medium heat.
Add kasoori methi and roasted cumin seeds.
Add capsicum, carrot, ginger, onion, and lots of coriander.
Top with more butter and enjoy with toasted bread or kulcha.
