How to make Easy Peanut Butter Granola Bars with Greek Yogurt Coating
Prepare the Granola Bars
Line a 9x13 Pyrex pan with parchment paper.
In a large bowl, combine the oats, Rice Krispies, coconut, almonds, chia seeds, and salt. Mix together.
In a microwave-safe bowl, combine the peanut butter and honey. Microwave for 30 seconds and mix together. Microwave for another 30 seconds or until the mixture is hot and pourable. Mix again.
Add the peanut butter and honey mixture to the dry oats mixture and mix until everything is moist and combined.
Press the mixture into the pan with a measuring cup. Make sure that it is tightly packed.
Place in the freezer for 2-3 hours. Then cut into bars and return to the freezer.
Prepare the Greek Yogurt Coating
Combine the water and vanilla in a small bowl. Sprinkle the gelatin over the top and whisk with a fork until the gelatin is evenly distributed. Set aside until it is set into a thick paste.
In another small bowl, whisk together the yogurt, honey, and salt. Microwave in 15-second bursts until the yogurt is warm and in a nice liquid form.
Whisk the gelatin into the yogurt mixture until it is completely dissolved. Pour the sweetener over the yogurt mixture and whisk until it is all combined into a thick but pourable coating.
Remove the bars from the freezer and drizzle the coating over the bars to your liking. Place the bars back into the freezer to harden overnight.
The next day, remove the bars and let them sit until the yogurt is completely dry.
Once the bars are dry, store them in an airtight container at room temperature. Enjoy!
