A popular Filipino grilled chicken dish marinated in a mixture of spices and vinegar, then basted with a flavorful annatto oil mixture.
Ingredients

- 2lbchicken, cut into serving pieces
- 2tbspginger, minced
- 2tbspgarlic, minced
- 3/4cuplemongrass, chopped
- 1cupcoconut vinegar
- 1/2cuplemon or calamansi juice
- 1tbspsalt
- 1/4cupbrown sugar
- 1cuplemon soda soft drink
- 1/2tbspground black pepper
Basting Sauce
- 3tbspannatto oil (atsuete oil)
- 1/2cupmargarine, softened
- 1/4tspsalt
- 1tsplemon or calamansi juice
How to make Chicken Inasal
In a freezer bag or large bowl, combine chicken, lemongrass, salt, ground black pepper, ginger, garlic, brown sugar, vinegar, lemon-lime soda, and lemon juice.
Stir or shake the mixture until every ingredient is well incorporated. Marinate for 1 to 3 hours.
In a bowl, combine margarine, annatto oil, salt, and lemon juice then stir. Set aside.
Grill the chicken while basting with a generous amount of the margarine mixture.
Transfer the grilled chicken to a serving plate.
Serve with sinamak. Share and enjoy!
Tips & Tricks
For best results, marinate the chicken overnight.
Use fresh lemongrass for a more aromatic flavor.
