How to make Kek Tapak Kuda
Prepare the batter
Preheat oven to 150 °C.
In a mixing bowl, beat the eggs and caster sugar until the mixture becomes pale and slightly fluffy.
Add Ovalette and continue mixing until the batter thickens. You’ll know it’s ready when you lift the whisk and the batter ribbons slowly.
Sift in the flour, milk powder, and baking powder. Mix gently until well combined.
Add vanilla essence and melted butter, then mix again until the batter is smooth and fully incorporated.
Make the cocoa base layer (optional).
Take 100g of the batter and mix it with 1 tablespoon of cocoa powder. Set aside.
This will become the bottom chocolate layer of your cake.
Pour the rest plain batter over the chocolate batter layer.
If you have leftover cocoa batter, you can put it into a piping bag as well and create a marble pattern on top.
Now bake the cake at 150°C (300°F) for about 25 minutes.
Once the cake is warm (not too hot), flip it over onto a piece of cling wrap, making sure the cocoa layer is facing up.
Slice the cake in half, add any filling you like, and roll it up.
Chill in the fridge until set
