A simple and healthy stir fry featuring yellow beans and a variety of vegetables.

- 1piecebig onion
- 1piecebig tomato
- 1piecegreen pepper
- 1piececourgette
- 1/2clovegarlic
- 1piececolander
- 4tspcooking oil
- 1cupC coconut milk
- pieceI carrot
For garnishing
- pieceOne of ovacado
1 cup of greens
- For a side to mix with beans
How to make Yellow Bean and Vegetable Stir Fry
For dinner or lunch
Chop the onion, tomato, green pepper, and courgette into bite-sized pieces.
Mince the garlic.
Rinse the yellow beans and drain using a colander.
In a pan, heat some oil over medium heat.
Add the onion and garlic to the pan and sauté until the onion is translucent.
Add the tomato, green pepper, and courgette to the pan and cook for a few minutes.
Add the yellow beans and stir fry until all vegetables are cooked through.
Then add coconut milk
Tips & Tricks
For added flavor, consider adding a pinch of salt and pepper.
You can add some chili flakes for a spicy kick.
