Ingredients

  • 2cups
    soft maize
  • 10 1/2cups
    beans
  • 1L
    water

Other ingredients

  • 1cup
    diced carrots
  • 2
    large potatoes (cut into large cubes)

    large onion (chopped)

    chicken stock cube
  • 1tsp
    salt
  • 3tbsp
    cooking oil

    garam masala

How to make Kenyan githeri

  1. In pressure cooker, add in the maize and beans and water.

  2. Let boil for 20 minutes.

Final cooking

  1. In a pan, add in cooking oil

  2. Add in onions and fry till they turn golden brown

  3. add in tomatoes and let them cook for 2 minutes

  4. Add in potatoes, carrots, garam masala and chicken stock cube and mix everything well. cover and let cook for 5 minutes.

  5. Add in the boiled beans and maize mixture. add 3 cups of water and let cook for 8 minutes.

  6. Add in shredded cabbage and salt to taste. cover and let cook for 5 minutes.

  7. Garnish with chopped coriander leaves and serve hot.
