Preheat oven to 425 degrees adding a 10 inch cast iron frying pan during the preheat
In a blender add eggs, milk, melted butter, flour, salt, vanilla and lemon zest
Blend on high until silky smooth about 40 seconds
After temperature is reached take frying pan out of the oven and add 3 tablespoons of butter and brush on the sides and bottom. The butter will instantly melt when it hits the pan.
Pour in the batter and bake at 425 degrees for 15 minutes or until it’s golden and batter has puffed.
