- 1cupall-purpose flour
- 2eggs
- 1 1/2cupsmilk
- 1/4tspsalt
- 1tbspvegetable oil or melted butter
- 1cupfresh spinach
- 1/4cupcoriander
How to make Spinach Crepes
In a blender, combine flour, eggs, milk, salt, oil, spinach, and coriander. Blend until smooth.
Let the batter rest for 15 minutes.
Heat a non-stick pan and lightly grease it with oil. Pour a ladleful of batter into the pan and swirl to spread evenly.
Cook for 1-2 minutes on each side until lightly golden. Repeat with the remaining batter.
Pair with a Spanish omelette, or fill with your favorite savory or sweet fillings.
