Prawn Noodies Stir Fry

Ingredients
Base
- 2packet Noodies (chicken flavor)
- 1cupreserved noodle cooking water
For the Stir Fry
- 1large yellow capsicum, sliced
- 1large red capsicum, sliced
- 1large red onion, sliced
- 3clovegarlic, minced
- 200gprawns, pan-seared
- 2tbspvegetable oil
- 1pinchsalt
- 1pinchpepper
Optional Garnish
- 1sprigspring onions, chopped
- 1piecered chili, sliced
How to make Prawn Noodies Stir Fry
Prepare the Noodies
Bring a pot of water to a boil and add the Noodies noodles along with their chicken flavor seasoning packets.
Cook for 3 minutes, stirring occasionally, until tender.
Drain the noodles through a colander, reserving 1 cup of the cooking liquid for later.
Pan-Sear the Prawns
Heat a small amount of oil in a pan over medium heat.
Season the prawns lightly with salt and pepper, then sear for 1-2 minutes per side until pink and fully cooked. Remove and set aside.
Heat 2 tbsp of vegetable oil in a large pan or wok over medium heat.
Add the sliced red onion and minced garlic. Sauté until the onions are caramelized and fragrant (about 3-4 minutes).
Toss in the sliced red and yellow capsicums and stir fry for 2-3 minutes, allowing them to soften slightly but retain their crunch.
Add the cooked prawns to the stir fry and toss gently to mix.
Add the cooked noodles to the pan, tossing everything together.
Pour in the reserved noodle cooking water a little at a time to loosen the mixture and coat everything in a light, flavorful sauce. Cook for an additional 1-2 minutes.
Remove the stir fry from heat and transfer to a serving dish.
Garnish with chopped spring onions and red chilies for extra flavor and a festive touch.
Tips & Tricks
Swap prawns for tofu, chicken, or beef for variety.
Add soy sauce, sesame oil, or a dash of chili sauce for added depth.
Sprinkle toasted sesame seeds or crushed peanuts on top for a finishing touch.
