    whole chicken, spatchcocked
  • 3tbsp
    Mediterranean herb marinade
  • 1tsp
    salt

How to make Mediterranean Herb Spatchcock Chicken

Prepare the Chicken

  1. Pat the spatchcocked chicken dry with a paper towel.

  2. Generously coat the chicken with the Mediterranean herb marinade, ensuring you rub it under the skin, inside, and on the outside for maximum flavor.

  3. Sprinkle with a little extra salt, if desired.

Marinate

  1. Cover the chicken and allow it to marinate in the refrigerator for at least 30 minutes. For deeper flavor, marinate for up to 4 hours.

Bake the Chicken

  1. Preheat your oven to 200°C (400°F).

  2. Place the chicken on a baking tray, skin-side up.

  3. Bake for 45-50 minutes or until the skin is golden and crispy, and the internal temperature of the thickest part of the chicken reaches 75°C (165°F).

Serve

  1. Rest the chicken for 10 minutes before carving.

  2. Serve with your choice of salad, roasted potatoes, rice, or couscous. Pair with a creamy herby sauce for an added touch.
