How to make Mediterranean Herb Spatchcock Chicken
Prepare the Chicken
Pat the spatchcocked chicken dry with a paper towel.
Generously coat the chicken with the Mediterranean herb marinade, ensuring you rub it under the skin, inside, and on the outside for maximum flavor.
Sprinkle with a little extra salt, if desired.
Marinate
Cover the chicken and allow it to marinate in the refrigerator for at least 30 minutes. For deeper flavor, marinate for up to 4 hours.
Bake the Chicken
Preheat your oven to 200°C (400°F).
Place the chicken on a baking tray, skin-side up.
Bake for 45-50 minutes or until the skin is golden and crispy, and the internal temperature of the thickest part of the chicken reaches 75°C (165°F).
Serve
Rest the chicken for 10 minutes before carving.
Serve with your choice of salad, roasted potatoes, rice, or couscous. Pair with a creamy herby sauce for an added touch.
