How to make Chicken Binagoongan

Fry Eggplant

  1. Slice the eggplant into desired pieces.

  2. Heat cooking oil in a pan.

  3. Add eggplant and fry until golden brown.

  4. Remove from pan and set aside.

Saute/Simmer

  1. In a large pot, add water and bring to a simmer.

  2. Add ginger, garlic, and shallots. Saute until fragrant.

  3. Add the fresh whole chicken and cook until it starts to brown.

  4. Stir in shrimp sauce, tomatoes, sugar, chicken powder, and spicy chilis.

  5. Add the green chili and continue to simmer until the chicken is fully cooked.

  6. Serve with fried eggplant and garnish with additional spicy chilis.
