Yemeni cuisine is one of the most ancient and distinctive in the Arabian Peninsula, shaped by the country's mountainous terrain, ancient spice trade, and relative isolation. Saltah, a hearty meat stew topped with fenugreek froth called hulba, is the national dish. Mandi and zurbian are festive rice preparations, while fahsa and aseed are everyday comfort foods.
