Northern Vietnamese cuisine, centered around Hanoi, is considered the oldest and most traditional culinary style in Vietnam. Reflecting the colder climate and historical scarcity, it favors subtle, balanced flavors with less sugar, fewer herbs, and more restrained use of spice compared to southern styles. Black pepper is preferred over chili, and dishes like pho bo (the original beef pho), bun cha (grilled pork with noodles), and cha ca (turmeric fish with dill) showcase the region's refined simplicity.
