Andean Recipes

Andean Venezuelan cuisine from the Mérida and Táchira states in the mountainous west is heartier and more rustic than coastal cooking. Pisca andina, a breakfast soup with potatoes, milk, egg, and cilantro, warms cold highland mornings. Morcilla (blood sausage), wheat bread, and trout from mountain streams are regional staples. The cuisine shares influences with neighboring Colombia, featuring dishes like mute (a thick tripe soup) and arepas de trigo (wheat flour arepas unique to the Andes).
