Upper Recipes

Upper Egyptian cuisine from the Nile Valley south of Cairo, including Luxor and Aswan, preserves some of the oldest food traditions in Egypt. The cooking is hearty and rustic, featuring dishes like fattah (layered bread, rice, and meat in vinegar-garlic broth) and Nubian-influenced stews with peanut and okra. Pigeon farming is deeply embedded in the culture, and grilled or stuffed pigeon is a regional specialty.
