Northern Recipes

Northern Ugandan cuisine from the Acholi, Langi, and other Nilotic peoples reflects a drier climate and a culinary tradition distinct from the banana-centric south. Millet bread (kwon) is the staple, served with various stews including malakwang (a leafy green vegetable stew), boo (shea butter-enriched dishes), and sesame paste sauces. Dried meat and fish preservation techniques are important in this region, where smoked and sun-dried proteins sustain communities through dry seasons. The cuisine is hearty and straightforward, with shea butter replacing other cooking oils and adding a distinctive nutty richness.
