Turkmen Recipes
Turkmen cuisine reflects the semi-nomadic traditions of the Turkmen people and the arid Karakum Desert landscape that dominates the country. The cuisine is meat-heavy, with lamb being the most prized protein, prepared simply through grilling, roasting, and stewing. Signature dishes include dograma (shredded bread and meat in broth), ishlekli meat-filled flatbread, and gutap stuffed turnovers. The cuisine is among the least known of Central Asian traditions, preserving ancient Turkic cooking methods with influences from Persian and neighboring culinary cultures.
