Tigrinya Recipes

Tigrinya cuisine from Ethiopia's Tigray region in the northern highlands is considered the ancestral root of Ethiopian culinary traditions, with some of the oldest food practices on the continent. The cuisine shares much with Eritrean cooking across the border, featuring dishes like tsebhi (stews), hilbet (fenugreek dip), and shiro (ground chickpea stew). Tigrinya injera is often made with a higher proportion of teff and tends to have a more sour, tangy flavor than Amhara versions. The region's ancient monasteries have contributed to an exceptionally rich tradition of fasting (vegan) dishes.
