Northern Thai cuisine, centered around Chiang Mai and the mountainous Lanna region, offers milder, earthier flavors compared to other Thai styles. Influenced by Burmese and Shan culinary traditions, it features turmeric, dried spices, and rich pork-based dishes rather than coconut milk-heavy curries. Sticky rice is the staple grain, and signature dishes include khao soi (curry noodle soup), sai ua (herbal sausage), nam prik ong (tomato-pork chili dip), and hang le curry.
