Mainland Recipes
Mainland Tanzanian cuisine encompasses the home cooking of the vast interior, from the shores of Lake Victoria to the slopes of Kilimanjaro and the southern highlands. Ugali served with various stews — beans, greens, or meat — is the universal staple, prepared slightly differently by each of Tanzania's many ethnic groups. Ndizi na nyama (plantains with meat), mchicha (amaranth greens), and dagaa (small dried fish from Lake Victoria) are widespread mainland dishes. The Chagga people of Kilimanjaro are known for their banana-based cuisine, while the Sukuma around Lake Victoria specialize in freshwater fish preparations.
