Western Recipes

Western Sudanese cuisine from the Darfur and Kordofan regions reflects the culinary traditions of the Fur, Masalit, Zaghawa, and other indigenous peoples. Millet and sorghum porridges dominate as staples, accompanied by richly spiced peanut and dried okra stews called mulah. Kawal, a fermented leaf condiment, adds a unique umami depth to Western Sudanese dishes not found elsewhere in the country. The cooking is hearty and communal, with large shared platters and a strong pastoral tradition of dairy-based drinks and dried meats.
