Southwestern Pueblo Recipes

Southwestern Pueblo cuisine comes from the Hopi, Zuni, Acoma, and other Pueblo peoples of the arid American Southwest. Blue corn is a sacred staple, ground into flour for piki bread, tortillas, and porridge. Beans, squash, chile peppers, and piñon nuts complement the diet. Adobe horno ovens are used for baking bread, and irrigation agriculture in the desert has sustained these communities for millennia. Dried foods and stews are essential to this cuisine.
