Sierra Leonean Recipes

Sierra Leonean cuisine is centered on rice, which is so fundamental that a meal without it is hardly considered a meal. Cassava leaves pounded and cooked in palm oil with fish and meat is the national dish, while plasas (leafy green stews), groundnut soup, and jollof rice are everyday staples. The Krio community, descended from freed slaves, contributed unique dishes like fried akara and foofoo. Sierra Leone's abundant coastline provides fresh fish, oysters, and lobster, while the interior's tropical forests yield palm wine, kola nuts, and diverse wild greens.
