Salvadoran cuisine is centered on corn masa and is defined by the pupusa, a thick stuffed griddle cake that is the country's beloved national dish. Filled with cheese, beans, chicharrón, or loroco (a native flower bud), pupusas are served with curtido (pickled cabbage slaw) and tomato salsa. Other staples include yuca frita, tamales de elote, sopa de pata (cow foot soup), and nuégados (fried dough with syrup). Pipil Indigenous and Spanish traditions form the cuisine's foundation.
